Ingredients

  • Four 1-inch thick pork chops
  • 1 ½ tsp. salt
  • 1 tbsp. Flour
  • ½ tsp. Cumin
  • 1 ¼  tsp. Garlic Powder
  • 1 ¼  tsp. Onion Powder
  • 1 tsp. Chili Powder
  • ½ tsp. Smoke Paprika
  • Black Pepper to taste
  • 2 tbsp. Olive Oil
  • Fresh chopped parsley for garnish
  • For the Glaze:
  • 1 cup Chicken Stock
  • 1 tbsp. Apple Cider Vinegar
  • 1 tbsp. RASPBERRY Artisan Jam
  • 1 tbsp. Butter

Method

  • Step 1 -
Season both sides of each pork chop with salt and set aside to rest.
  • Step 2 -
In a small bowl, combine flour, spices and black pepper and mix to create the rub.
  • Step 3 -
Heat oil in a large skillet over medium-high heat, then coat both sides of each pork chop with the spice rub.
  • Step 4 -
Once oil is hot, add pork chops to the skillet and cook for 2-3 minutes covered, until golden brown.
  • Step 5 -
Flip the chops and cover, cooking for another 5-10 minutes over low heat, or until internal temperature reaches 145° F. Transfer to a plate and cover.
  • Step 6 -
To make glaze, combine chicken stock, vinegar and jam in the skillet over medium-high heat and bring to a simmer. Allow to simmer until sauce thickens, about 5-7 minutes, then remove from heat.
  • Step 7 -
Stir in the pat of butter, then add pork chops back to the pan, spooning some of the sauce over top. Sprinkle with fresh parsley, serve and enjoy!
