  • Step 1 -
    Combine peanut butter and maple syrup in a medium bowl and stir to combine.
  • Step 2 -
    Add in the flour and baking powder and continue stirring until it forms into a dough.
  • Step 3 -
    Transfer dough to the fridge to chill for 20 minutes. Meanwhile, line air fryer basket with parchment paper. Use paper with pre-cut holes throughout or cut some of your own to allow air flow.

    Once dough has chilled, lightly flour a kitchen surface and knead the dough about 5-6 times. Divide dough into 6 portions and roll into balls.

    Lightly grease the bottom of a flat measuring cup or glass with coconut oil and gently press each ball down into ½ inch-thick cookies. Create a crosshatch pattern on the cookies using a fork, and then transfer cookies to the air fryer, leaving about an inch of space in between each.

    Bake at 325° F for 8 minutes, or until cookies are golden brown.

    Transfer baked cookies to a cooling rack and allow to cool completely.

    Meanwhile, melt the chocolate chips in a small bowl in 30-second increments, stirring in between each until fully melted.

    Dip each cookie into the chocolate and top with festive sprinkles. Store in an airtight container for up to 3 days.
