Thai Turkey Meatballs with Almond Cashew Dipping Sauce

Ingredients

  • For the Meal Prep:
  • Veggies for Dipping
  • Mixed nuts
  • 1 bag frozen riced cauliflower
  • Cilantro for Garnish
  • For the Meatballs:
  • 1 lb. Ground Turkey
  • 1 tsp. Garlic powder
  • 1 tsp. Onion Powder
  • ½ tsp. Ground Ginger
  • Ground black pepper, to taste
  • For the Meatball Sauce:
  • 2 tbsp. Olive Oil
  • 2 Cloves Minced Garlic
  • 1 Small Onion, diced
  • ¼ cup Soy Sauce
  • 1-2 tsp. Red Curry Paste
  • ¼ cup Rice Vinegar
  • One 13 oz. can Full Fat Coconut Milk
  • ½ cup Spread The Love® UNSALTED CRUNCH Almond Butter
  • 2 Tbsp. Coconut Sugar
  • For the Dipping Sauce:
  • ½ cup Spread The Love® POWER Almond Cashew Butter
  • 3 tbsp. Soy Sauce
  • 1 tbsp. Rice Vinegar
  • 2 tsp. Fresh Lime Juice
  • 1 clove minced garlic
  • ½ tsp. Ground Ginger
  • Water to thin (1-2 tsp.)

Method

  • Step 1 -
    Preheat oven to 400° F and line a large baking sheet with parchment paper.
  • Step 2 -
    Add all meatball ingredients to a large bowl and mix just until combined. Roll into 1-2” meatballs and place on baking sheet. Transfer to the oven and cook for 15-18 minutes, or until internal temperature reaches 165° F.
  • Step 3 -
    Meanwhile, prepare the meatball sauce. Heat olive oil in a large skillet over medium-high heat and sauté onions until translucent, about 3 minutes. Add in garlic and cook for another minute.
  • Step 4 -
    Whisk together the remaining meatball sauce ingredients until smooth, then pour into the skillet. Bring the mixture to a simmer and allow to thicken for 5-7 minutes.
  • Step 5 -
    Meanwhile, set aside meal prep containers, slice veggies and prepare riced cauliflower according to package instructions.
  • Step 6 -
    Add all dipping sauce ingredients to a medium bowl and whisk until smooth and creamy. If the sauce is too thick, add water 1 tsp. at a time to thin. Divide sauce into 4 individual dipping containers.
  • Step 7 -
    Once meatballs are cooked, add them to the sauce and stir to coat.
  • Step 8 -
    Prepare meal prep containers by layering meatballs on a bed of riced cauliflower and adding veggies, dipping sauce and nuts. Store meals in the fridge for up to 4 days.
