Ingredients
- ½ cup freshly squeezed orange juice
- 1 medium orange – washed and cut into small pieces with the peel on.
- 1 egg
- ½ cup unsalted butter
- 1 tsp. vanilla extract
- 1 ¾ cups all-purpose flour
- ¾ cup sugar or coconut sugar
- 1 tsp. baking powder
- 1 tsp. baking soda
- ¼ cup Spread The Love RASPBERRY Artisan Jam
Method

Step 1 -
Preheat oven to 375° F and line a muffin tin with 12 liners. -
Step 2 -
In a medium bowl, combine flour, sugar, baking soda and baking powder, stir and set aside. -
Step 3 -
Add the orange juice and sliced orange pieces into a blender and blend on high speed until smooth. -
Step 4 -
Add in the egg, butter and vanilla and blend again until smooth. -
Step 5 -
Pour the orange mixture into your dry batter and stir to combine. -
Step 6 -
Divide batter evenly into 12 muffin cups. Use a spoon to swirl a bit of Raspberry jam on top of each muffin. -
Step 7 -
Bake for 13-15 minutes or until a toothpick inserted into the center of a muffin comes out clean. -
Step 8 -
Allow to cool on a wire rack and enjoy! Uneaten muffins should be stored in an air-tight container in the fridge for up to 3 days. Best enjoyed warm with an extra scoop of jam!
