Learn why Kelly LOVES this recipe
This garlic ginger peanut sauce does it all. I use it as a marinade for salmon and chicken, a dressing in kale edamame and quinoa salads, as a spread on wraps to use up leftover proteins and veggies, and of course as a dipping sauce for spring rolls, potstickers and dumplings.
Most often though, this garlic ginger peanut sauce makes it on my table on weeknights to bring together stir fry dishes. What’s best is it’s a meal the whole family likes! As a business owner and active mom, always training for some sort of athletic event while raising very active kids, I know how comforting it is to have that one balanced meal your entire family will eat without any special adjustments or extras. And this sauce makes that possible for us!
Building a balanced performance meal for your active family
While portions may differ depending on age, stage of development, and current activity level, as a performance dietitian, I recommend all meals contain high quality protein, an energizing starch, and either veggies or fruit. With that though, we need some healthy unsaturated fats (hint: that’s fats that come from plants like peanuts and nuts or from fish), and flavor that keeps you satisfied. While you can build any combo you want, most often this dish for us is buckwheat noodles, tofu, edamame, and whatever other veggie is in the fridge. Of course, topped with this garlic ginger peanut sauce. For spring though, we get excited and switch things up, so now my go-to is fluffy rice, super fresh in season snap peas, and a grilled protein like blackened salmon.
The base of the sauce that pulls it all together got better when I was introduced to Spread the Love. As a dietitian who cares not just about performance, but also about the connection and community that food brings, I adore that Spread the Love is made with a single ingredient, in the USA, and founded by the most amazing couple, living a busy and active life with their own family, too!
