These yogurt popsicles are a fun and refreshing treat for hot summer days, and make a healthy alternative to ice cream. We love the simple combination of plain yogurt with our Raspberry Artisan Jam, but if you’re making these for Memorial Day or Fourth of July, adding some blueberries to the mix makes them look extra Red, White and Blue patriotic!
1 cup blueberries, plus 1/4 cup extra for decorating
Equipment
Popsicle mold
Method
Step 1 - To create Raspberry Tie-Dye Pops
Divide yogurt equally into two bowls. In one bowl, mix in the raspberry jam until well combined. Leave the other bowl plain.
Step 2
Mash the raspberries very gently with a fork, until large chunks remain.
Step 3
Using a tablespoon measure, first spoon about 1-2 tablespoons of the raspberry jam yogurt mixture into each popsicle mold. Next, add a few mashed raspberries to each mold. Then, add 1-2 tablespoons plain vanilla yogurt into each mold. Repeat process until all the molds are filled. If desired, swirl mixture gently in places with a toothpick to create a tie-dye swirl effect.
Step 4
If your popsicle mold has stick attachments, insert them now, otherwise freeze for two hours before inserting a wooden popsicle stick in each mold. Freeze for 8 hours total, or overnight.
Step 5 - To create Red, White, and Blue Tie-Dye pops
In a blender or a food processor, puree blueberries until mostly smooth, then mix in 1/4 cup yogurt.
Step 6
Divide remaining yogurt equally into two bowls. In one bowl, mix in the raspberry jam until well combined. Leave the other bowl plain.
Step 7
Mash the raspberries very gently with a fork, until large chunks remain.
Step 8
To assemble, gently drop about 2 tsp of mashed raspberries into each popsicle mold. Next, using a tablespoon measure, spoon about 2 tablespoons of the raspberry jam yogurt mixture on top of the raspberries. Then, add 2 tablespoons plain vanilla yogurt into each mold. Drop a few whole blueberries on top of the vanilla yogurt, and finally, fill the rest of the popsicle mold with the blueberry puree mixture.
Step 9
If your popsicle mold has stick attachments, insert them now, otherwise freeze for two hours before inserting a wooden popsicle stick in each mold. Freeze for 8 hours total, or overnight.
