Ingredients
- 1 cup brown rice flour
- 2 tbsp. almond flour, finely ground
- 1/4 cup baking stevia
- 1/4 cup Spread The Love® NAKED Organic Peanut Butter
- 1/4 cup unsweetened apple sauce
- 2 eggs, 1 egg white
- 1/4 cup unsweetened almond milk
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1 tsp baking soda
- 1 tsp baking powder
- 2 tbsp peanut butter chips
- Frosting
- 1/2 cup Spread The Love® NAKED Organic Peanut Butter
- 1/2 cup Greek yogurt
- 1/4 cup confectioner's sugar
- Topping
- 2 tbsp peanut butter chips
- 2 tbsp chocolate chips
Method

Step 1 -
Pre-heat oven to 350F and prepare two 6″ round baking pans with non-stick spray.

Place the eggs, applesauce, peanut butter, vanilla, almond milk and baking stevia into a mixer and beat until fluffy.

In a separate bowl, stir together flours, salt, baking soda and powder. Slowly mix your dry ingredients into your wet just until combined. Stir in peanut butter chips.

Distribute the batter evenly between the two pans and bake both cakes for 19-21 minutes.

Step 5 -
Remove from oven and let cool for 5 minutes before removing from the pans and transferring to a wire rack to finish cooling.

To make frosting, place ingredients into a mixer and beat until light and fluffy.

Once cooled, frost cakes then sprinkle with chocolate chips and peanut butter chips, if desired.
