Strawberry Cashew Crunch Bites
These guilt-free, healthy, crunchy bites are not only tasty, they are also rich in protein, healthy fats and fiber. The perfect easy snack to make for your Valentine to show them how much you care.
Step 1 -
Combine all ingredients except for the freeze-dried strawberries into a large bowl and stir to combine.
Step 2 -
Place in the refrigerator for 30-40 minutes to allow the mixture - this step is important so you can form into bites!
Step 3 -
Remove mixture from the fridge and gently fold in the strawberries.
Step 4 -
Using a 1.5 tbsp. cookie scoop, grab heaping scoops of the mixture and use your hands to roll into a ball.
Step 5 -
Seat each energy bite onto a large baking sheet lined with parchment paper.
Step 6 -
Once finished you should have 12-15 energy bites.
Step 7 -
If the mixture is a little too moist to hold the ball shape, place the baking sheet in the fridge and allow them to firm up for another 30 minutes or so. Then use your hands to roll into balls.
Step 8 -
Store in the fridge in an air-tight container for 3-5 days.
