1/4 Cup Unsweetened Vegan Milk (Pea works best as it’s on the thicker side)

For The Pizza
2 Plain 9 Inch Pizza Crusts
1 Cup Red Bell Pepper Diced in 1 centimeter cubes
1 Cup Tomato Diced in 1 centimeter cubes
1 Cup Fresh Corn
1 Cup Baby Broccoli Florets
1/2 Red Onion Diced in 1 centimeter cubes
1 Cup Vegan Mozzarella Cheese (Divided)
1 Tablespoon Olive Oil
Pinch of Salt
Step 1 - For the Vegan Cashew Alfredo Sauce
Place all the ingredients in a bowl and mix with a whisk until there are no lumps. Taste and add more salt to your taste.
Step 2 - Make the Pizza
Pre-Heat Oven to 400C (Please check the package directions on your pizza crust that you are using and set the oven temperature to what they recommend).
Spread the Alfredo sauce all over the crust and then top the sauce with the mozzarella cheese. Follow with the vegetables. Use any pattern you want, but we started with the red bell peppers on the perimeter and then followed with the tomatoes, corn, broccoli and finished with the red onion in the middle.
