Peanut Butter Stir-Fry Noodles

Bowl of Peanut Butter Stir Fry Noodles

Ingredients

  • 2 tbsp coconut oil
  • 1 tbsp sesame oil
  • 3 cloves garlic (minced)
  • 2 inches ginger (finely chopped)
  • Handful cashews
  • 2 tbsp maple syrup
  • 2 chillies (finely chopped)
  • 2 red peppers (chopped)
  • Lime juice (1 lime)
  • 1/2 cup scallions (finely chopped)
  • Handful asparagus (ends cut)
  • Handful baby corn (cut in halves)
  • Handful sprouting broccoli (ends cut)
  • Handful sugar snap peas
  • 1/4 cup soy sauce
  • 3/4 cup Spread The Love® NAKED Organic Peanut Butter
  • 1 cup garden peas
  • Cooked Soba buckwheat & wholewheat noodles

Method

  • Step 1 -
    Warm the oils in a wok
  • Step 2 -
    Add the garlic, ginger, cashews & maple syrup & stir them all around – this will release the aroma of the ginger & garlic
  • Step 3 -
    Add the chillies, red peppers, lime juice & stir them all round so the peppers soften slightly
  • Step 4 -
    Stir in the scallions
  • Step 5 -
    Add the asparagus, baby corn, broccoli & sugar snap peas & stir them round so everything is covered in the liquid
  • Step 6 -
    Add the soy sauce, peanut butter & stir it all round so the vegetables are lightly covered in the peanut butter
  • Step 7 -
    Add the garden peas, cooked wholewheat noodles & stir everything round so everything is well mixed together. ENJOY!!!
