Peanut Butter Stir-Fry Noodles
Ingredients
- 2 tbsp coconut oil
- 1 tbsp sesame oil
- 3 cloves garlic (minced)
- 2 inches ginger (finely chopped)
- Handful cashews
- 2 tbsp maple syrup
- 2 chillies (finely chopped)
- 2 red peppers (chopped)
- Lime juice (1 lime)
- 1/2 cup scallions (finely chopped)
- Handful asparagus (ends cut)
- Handful baby corn (cut in halves)
- Handful sprouting broccoli (ends cut)
- Handful sugar snap peas
- 1/4 cup soy sauce
- 3/4 cup Spread The Love® NAKED Organic Peanut Butter
- 1 cup garden peas
- Cooked Soba buckwheat & wholewheat noodles
Method

Step 1 -
Warm the oils in a wok

Step 2 -
Add the garlic, ginger, cashews & maple syrup & stir them all around – this will release the aroma of the ginger & garlic

Step 3 -
Add the chillies, red peppers, lime juice & stir them all round so the peppers soften slightly

Step 4 -
Stir in the scallions

Step 5 -
Add the asparagus, baby corn, broccoli & sugar snap peas & stir them round so everything is covered in the liquid

Step 6 -
Add the soy sauce, peanut butter & stir it all round so the vegetables are lightly covered in the peanut butter

Step 7 -
Add the garden peas, cooked wholewheat noodles & stir everything round so everything is well mixed together. ENJOY!!!
