Peanut Butter Stir-Fry Noodles

Ingredients:

2 tbsp coconut oil
1 tbsp sesame oil
3 cloves garlic (minced)
2 inches ginger (finely chopped)
handful cashews
2 tbsp maple syrup
2 chillies (finely chopped)
2 red peppers (chopped)
lime juice (1 lime)
1/2 cup scallions (finely chopped)
handful asparagus (ends cut)
handful baby corn (cut in halves)
handful sprouting broccoli (ends cut)
handful sugar snap peas
1/4 cup soy sauce
3/4 cup Spread The Love® Peanut Butter
1 cup garden peas
cooked Soba buckwheat & wholewheat noodles

Method:

1 Warm the oils in a wok
2 Add the garlic, ginger, cashews & maple syrup & stir them all around – this will release the aroma of the ginger & garlic
3 Add the chillies, red peppers, lime juice & stir them all round so the peppers soften slightly
4 Stir in the scallions
5 Add the asparagus, baby corn, broccoli & sugar snap peas & stir them round so everything is covered in the liquid
6 Add the soy sauce, peanut butter & stir it all round so the vegetables are lightly covered in the peanut butter
7 Add the garden peas, cooked wholewheat noodles & stir everything round so everything is well mixed together. ENJOY!!!
