Peanut Butter Cup Granola Bars

What do you get when you combine your new favorite granola with the world’s best flavor combo? Peanut butter cup granola bars! We’ve paired our Almond Butter Granola with crispy rice cereal to give you a deliciously crunchy bar, then dressed it up with a creamy peanut butter drizzle. Extra peanut butter cup pieces not required, but 100% recommended.

Method

  • Step 1
    In a large bowl, combine the granola, cereal, peanuts and almond flour and set aside.
  • Step 2
    In a small bowl, add the coconut oil and honey and heat just until the coconut oil is melted completely. Stir together, then mix in the cacao powder until smooth.
  • Step 3
    Pour the mixture over the granola along with the peanut butter and maple syrup.
  • Step 4
    Mix together until the granola is evenly coated, then pour into an 8x8 baking dish lined with parchment paper.
  • Step 5
    Using the bottom of a measuring cup, firmly press the mixture into the bottom of the dish so that the bars are about 1 in. thick.
  • Step 6
    Place in the freezer for 30 minutes to allow the bars to firm up, then cut into bars. Store in an air-tight container in the refrigerator for up to 2 weeks.
  • Step 7 - Optional peanut butter drizzle

    Add 2 tbsp. of Spread The Love peanut butter to a small bowl and refrigerate for at least 30 minutes. Drizzle over the cold bars and top with chopped peanut butter cup pieces!
