Perfect for sharing with family and friends, this wholesome dessert honors tradition while embracing a modern touch.
Preheat oven to 350° F. Grease a square 8x8 baking dish and set aside.
Step 2 -
Prepare the rice by adding it to a medium pot with ½ cup of the peanut butter, 1 cup of the coconut milk and brown sugar. Bring to a simmer and cook covered until rice has absorbed most of the liquid, stirring occasionally to prevent sticking.

In a small saucepan, make the peanut butter sauce by combining the remaining 1 cup of coconut milk with ½ cup of peanut butter over medium heat. Slowly drizzle the peanut butter into the coconut milk while whisking continuously to prevent separation.

Bring the mixture to a boil while continuing to stir, then remove from heat and pour over the rice.

Transfer to the oven and bake for 20-25 minutes. Allow to cool slightly before slicing and enjoying - best served warm! Store covered at room temperature for up to 2 days.
