Did you know the world’s most expensive taco dish costs a whopping $25,000? Luckily these Peanut Chicken Tacos can be made at home at just a miniscule fraction of that price, and you won’t be able to get enough of the homemade pineapple slaw!
Ingredients
- Pineapple Slaw
- 1 cup finely chopped carrot
- 1 cup finely chopped red cabbage
- ½ diced jalapeno
- ½ cup diced scallions
- 2 cups canned pineapple tidbits
- 1/2 cup plain yogurt
- 1/4 cup pineapple juice (reserved from the can)
- Juice from 1 lime
- 1 tbsp spicy brown mustard
- 1/4 tsp salt
- Chicken & Peanut Sauce
- 1/3 cup Spread the Love Peanut Butter
- 3 tbsp soy sauce
- 1 1/4 tsp ground ginger
- 1 1/4 tsp garlic powder
- 2 tbsp warm water
- Juice from 1/2 lime + zest
- 1 lb thinly sliced chicken breasts
- 2 tbsp olive oil
- Salt & pepper to taste
- Taco shells of choice

Method

Step 1 -
In a medium bowl, combine chopped carrots, cabbage, jalapeno, scallions and pineapple, set aside. -
Step 2 -
In a small bowl, combine yogurt, pineapple juice, lime juice, mustard & salt. Whisk together until smooth and creamy. -
Step 3 -
Pour the slaw dressing over the rest of the ingredients and stir to combine. Set in the fridge to chill. -
Step 4 -
Heat olive oil in a large skillet over medium-high heat. Chop the chicken into bite-sized pieces and add to the pan with oil, seasoning with salt & pepper. -
Step 5 -
While the chicken is cooking, combine peanut butter, soy sauce, ginger, garlic, water & lime juice into a small bowl and whisk until smooth & creamy. Then, continue cooking the chicken, mixing occasionally until internal temperature reaches 165 °F. -
Step 6 -
Pour the peanut sauce over the chicken and stir until all pieces are evenly coated. -
Step 7 -
Fill your favorite taco shells with chicken and top with plenty of pineapple slaw.
