PB Chicken Tacos

Three PB Chicken Tacos with lime and jalapeno

Did you know the world’s most expensive taco dish costs a whopping $25,000? Luckily these Peanut Chicken Tacos can be made at home at just a miniscule fraction of that price, and you won’t be able to get enough of the homemade pineapple slaw!

Ingredients

  • Pineapple Slaw
  • 1 cup finely chopped carrot
  • 1 cup finely chopped red cabbage
  • ½ diced jalapeno
  • ½ cup diced scallions
  • 2 cups canned pineapple tidbits
  • 1/2 cup plain yogurt
  • 1/4 cup pineapple juice (reserved from the can)
  • Juice from 1 lime
  • 1 tbsp spicy brown mustard
  • 1/4 tsp salt
  • Chicken & Peanut Sauce
  • 1/3 cup Spread the Love Peanut Butter
  • 3 tbsp soy sauce
  • 1 1/4 tsp ground ginger
  • 1 1/4 tsp garlic powder
  • 2 tbsp warm water
  • Juice from 1/2 lime + zest
  • 1 lb thinly sliced chicken breasts
  • 2 tbsp olive oil
  • Salt & pepper to taste
  • Taco shells of choice

Method

  • Step 1 -
    In a medium bowl, combine chopped carrots, cabbage, jalapeno, scallions and pineapple, set aside.
  • Step 2 -
    In a small bowl, combine yogurt, pineapple juice, lime juice, mustard & salt. Whisk together until smooth and creamy.
  • Step 3 -
    Pour the slaw dressing over the rest of the ingredients and stir to combine. Set in the fridge to chill.
  • Step 4 -
    Heat olive oil in a large skillet over medium-high heat. Chop the chicken into bite-sized pieces and add to the pan with oil, seasoning with salt & pepper.
  • Step 5 -
    While the chicken is cooking, combine peanut butter, soy sauce, ginger, garlic, water & lime juice into a small bowl and whisk until smooth & creamy. Then, continue cooking the chicken, mixing occasionally until internal temperature reaches 165 °F.
  • Step 6 -
    Pour the peanut sauce over the chicken and stir until all pieces are evenly coated.
  • Step 7 -
    Fill your favorite taco shells with chicken and top with plenty of pineapple slaw.
