  • Step 1 -
    Add the oats to a large skillet and toast over medium heat until fragrant, stirring occasionally.
  • Step 2 -
    Once the oats have cooled, transfer to a large bowl. Add in almond butter, honey, vanilla, coconut oil and salt and stir until oats are evenly coated.
  • Step 3 -
    Fold in the chocolate chips, then scoop about 1 ½ tbsp. at a time and roll into a ball. Place onto a baking sheet lined with parchment paper and repeat with remainder of batter until you have 10-12 cookies.
  • Step 4 -
    Lightly grease the bottom of a drinking glass with a neutral oil, then gently press down onto each ball to form into a cookie shape.
  • Step 5 -
    Transfer cookies to an airtight container and chill in the refrigerator for at least 30 minutes before enjoying. Store in the fridge for up to 7 days.
