Homemade Peanut Brittle

Ingredients

  • 2 cups granulated sugar
  • 1 cup corn syrup
  • ½ cup water
  • ¾ tsp. salt
  • ½ cup butter, cubed
  • 2 heaping cups unsalted roasted peanuts
  • 1 tbsp. vanilla extract
  • 1 tsp. baking soda
  • ½ cup NAKED Organic Peanut Butter, divided
  • ½ cup dark chocolate chips

Method

  • Step 1 -
    Line a medium baking sheet with parchment paper and set aside.
  • Step 2 -
    In a large pot, combine sugar, corn syrup, water and salt over medium heat, stirring occasionally. Bring the mixture to a boil and continue stirring frequently until it reaches 280 degrees F on a candy thermometer.
  • Step 3 -
    As soon as the mixture reaches temperature, add in the butter, peanuts and ¼ cup NAKED Organic Peanut Butter. Continue stirring the mixture vigorously for 10-15 minutes, or until it reaches 300 degrees F.
  • Step 4 -
    Immediately remove from heat and stir in the vanilla and baking soda, then quickly pour onto the baking sheet and spread the mixture into an even layer.
  • Step 5 -
    After about 5 minutes when the peanut brittle has cooled, melt the chocolate chips in a microwave-safe bowl in 30 second increments until fully melted, stirring in between each.
  • Step 6 -
    Drizzle the chocolate over the peanut brittle, along with the remaining ¼ cup peanut butter. Sprinkle with crushed peanuts if desired, then transfer to the fridge until the chocolate is completely solid.
  • Step 7 -
    Use a mallet to break the candy into chunks, then divide into containers and store in the fridge for up to 7 days.
