Carrot Cake Energy Bites

These carrot cake energy bites pair perfectly with your favorite smoothie, oatmeal, or make a great on-the-go snack for busy mornings. Made with creamy Spread The Love cashew butter and naturally sweetened with dates, these little treats will satisfy your sweet tooth and come together in less than 15 minutes!

Ingredients

  • 1 cup rolled old-fashioned oats
  • 1 tsp. ground cinnamon
  • 1/2 tsp. ground ginger
  • 1/4 tsp nutmeg
  • 1 1/2 cups chopped carrots
  • 1/2 cup pitted dates, soaked in warm water for 10 min
  • 1 cup pecans or walnuts
  • 1/4 cup + 2 tbsp. Spread The Love® BASIC Cashew Butter
  • 1/2 cup shredded unsweetened coconut

Method

  • Step 1
    Add the oats, cinnamon, ginger, and nutmeg to a large bowl and set aside.
  • Step 2
    Add carrots, dates, pecans, cashew butter and shredded coconut to a blender.
  • Step 3
    Blend on high speed until mixture is smooth and creamy, scraping down the sides as needed.
  • Step 4 - Add the mixture to the bowl and stir everything until evenly incorporated.
  • Step 5
    In portions of about 1 ½ tbsp, scoop out and use your hands to roll into a ball shape. Rinse your hands after rolling a few to minimize sticking. If using on fruit skewers, roll about 1 tbsp. of the mixture at a time.
  • Step 6
    Slide onto skewers with your favorite fruit, or enjoy as a healthy snack on the go!
  • Step 7
    Energy bites will last in an air-tight container in the refrigerator for 7-10 days.
