- 1 cup rolled old-fashioned oats
- 1 tsp. ground cinnamon
- 1/2 tsp. ground ginger
- 1/4 tsp nutmeg
- 1 1/2 cups chopped carrots
- 1/2 cup pitted dates, soaked in warm water for 10 min
- 1 cup pecans or walnuts
- 1/4 cup + 2 tbsp. Spread The Love® BASIC Cashew Butter
- 1/2 cup shredded unsweetened coconut
Method

Step 1
Add the oats, cinnamon, ginger, and nutmeg to a large bowl and set aside.

Add carrots, dates, pecans, cashew butter and shredded coconut to a blender.

Blend on high speed until mixture is smooth and creamy, scraping down the sides as needed.

Step 4 - Add the mixture to the bowl and stir everything until evenly incorporated.

In portions of about 1 ½ tbsp, scoop out and use your hands to roll into a ball shape. Rinse your hands after rolling a few to minimize sticking. If using on fruit skewers, roll about 1 tbsp. of the mixture at a time.
