These no-bake treats are a traditional holiday favorite in our content creator Veronica’s family (check out her mom’s old handwritten recipe below!), but they’re simple and delicious enough to be enjoyed any time of year! This is a fun one to get the kiddos involved in, too (especially since they can safely lick the batter right off their fingers). Watch this recipe video

No Bake PB Cocoa Cookie

Ingredients

Method

  • Step 1
    Line two baking sheets with waxed paper or baking parchment.
  • Step 2
    In a medium saucepan over medium heat, bring the sugar, milk, butter, and cocoa powder to a rolling boil, stirring occasionally. Allow to boil for one minute, then remove from heat. Add the peanut butter, vanilla, and salt to the hot mixture, and stir until smooth. Then, add the quick-cooking oats and stir until fully incorporated.
  • Step 3
    Drop tablespoonfuls of the mixture onto the prepared baking sheets, and let rest at room temperature until cooled and hardened, about 30 minutes. Serve immediately or store in an airtight container for up to three days.
  • Step 4 - Notes
    If making these in a hot day, the cookies can be placed in the refrigerator to cool more quickly.
